The Holiday Menu

Just one more week until...

Children scurry over to the tree to rip through carefully taped paper;

Loved ones pour into your living room... some of who may not have been invited;

Men congregate around the tv making all kinds of joyful noise rooting for their favorite teams;

And you, your mother and/or grandmother in the kitchen putting the finishing touches on your second holiday feast.

Seems like it was just yesterday that we were slaving over a big bird and all the Thanksgiving fixins. Now its time to do it all over again.

There will be no turkey or ham here. No more dressing. The greens didn't even make my list. I am keeping it short, yummy and simple. Three delicacies, a glass of cider and dessert... that's it.

I am planning to have chicken breast, marinated in Kraft Catalina salad dressing, grilled to perfection. Topped with a bruschetta made of diced tomatoes, shredded mozzarella cheese and basil. Along side this will be some linguine, tossed in a sauce of stewed tomatoes, ground turkey, onions, a little bit of garlic, diced black olives and basil. To complete my dinner I will throw in some Del Monte canned green beans and garlic bread. A scoop of Peppermint ice cream over a slice of pound cake and a nice cold glass of apple cider and voila! Christmas dinner is served.

Oh geez that sounds simple. I am having an appetizer menu on Christmas eve and dinner on Christmas day, plus I've got to get a head start on my cleaning now for the arrival of guests.

Sample items: Turkey, Turkey Ham, Veggie Turkey, Frittata, Asparagus wrapped in Lox, stuffed mushrooms, garlic string beans, stuffing, cranberries, etc.

I could go on,but I am tired just writing it. Imagine me cooking in it.

That sounds like its going to be quite the feast =). The last thing I wanna do is be stressed out next week so I wanted to keep it as simple as possible. Sometimes easier to do when entertaining a crowd of 6 that isn't all that picky.

You betta work! I LOVE this menu.

I got one better, though: I'm going to someone else's house and letting HER cook! Yes!!!!!

Well, it's just going to be us four for Christmas dinner, but I'm still going to go all out.

We're having a pineapple-ginger-brown sugar-glazed ham, lemon roast turkey, 4-cheese macaroni (& cheese...lol), greens with smoked turkey, sweet potato pie and some crescent rolls. Oh - and dressing!

I do enjoy making tons of food because then I don't have to cook for like three days. :)

All of that sounds yummy. My Christmas spread will be on my mother-in-laws table, HA!

If you like apple cider you should try it hot with about 1/2 or whole tablespoon of caramel. Caramel Apple Cider. I make this all season long.

I think we're going Greek for Christmas...moussaka, spanakopita,lemon potatoes, toasted pita and salad...and of course Christmas cookies ;)

Mmmm. Sounds good. We will be traveling this Christmas, like every Xmas. We did the Thanksgiving Spread and now it is time to let others do the work.

that is quite a spread but it sounds soooo good! I can actually visual that chicken right now. The peppermint ice cream and pound cake is what I could use right now though. Yum!

now i love the way this menu sounds! especially the part about the pound cake.

as far as actual food, i'm not sure. i'll probably whip up something to take to my guy's parent's house when we go over there. they'll be having the usual, and i'll be eating my dish along with some of their tasty pound cake and sweet potato pie. mmmm mmmm mmmm....

oh yeah! i'm also gonna make a cake too. it's like a fruit cake but not the one people usually think of. can't wait!

(as you can see i'm mostly excited about the sweets. i don't always have 'em so when holidays roll around it's on!)
